Apricot Almond Orange
Ingredients:
1/2 c. dried, unsulphured apricots, plus soak liquid as needed
1-2 T. fresh coconut flakes
1/4 c. fresh, raw almonds
1-2 T. rice syrup
1-1/3 c. orange juice
adjust pinch nutmeg (opt.)
2 ice cubes (opt.)
Method
Re-hydrate apricots. *see note below Grind coconut flakes into a fine
meal, using an electric seed grinder. Grind almonds in the same fashion.
Pour juice into blender and add apricots, nuts, coconut, rice syrup and
spice. Blend until smooth and creamy. Add ice, frozen bananas, if desired
and re-blend.
Serves 2
* Re-hydrate fruit as follows:
Fill a pint-sized jar with about one cup of dried fruit (or whatever is
specified by recipe). Fill the jar with water or juice. Let sit overnight.
Or:
Cover dried fruit with near-boiling water in a mixing bowl and
increase the amount an inch or two. Wait 15 minutes for fruit to soften.
