Holiday Rice Pudding
Ingredients:
3 cups cooked rice
3 cups milk
1/2 cup sugar
3 tablespoons butter or margarine
1/2 cup dried cranberries
Finely grated zest of 1 lemon
1 teaspoon vanilla extract
Directions:
Combine rice, milk, sugar and butter in 2- to 3-quart saucepan. Cook over
medium heat, stirring often, 20 minutes. Add cranberries and lemon rind;
cook 10 minutes. Remove from heat; add vanilla. Spoon into serving dishes.
Makes 6 servings.
Nutrition:
Each serving provides 332 calories, 6 grams protein, 9 grams fat, 57 grams
carbohydrate, 1 gram dietary fiber, 26 milligrams cholesterol and 123
milligrams sodium.
