Tomato Basil Pasta Salad
12 ounces (about 5 cups) bow tie pasta
1/2 cup vegetable oil
1/4 cup balsamic vinegar
2 teaspoons Dijon-style mustard
1 teaspoon salt
1/8 to 1/4 teaspoon pepper
2 cups lightly packed fresh basil leaves, snipped
3 large tomatoes, coarsely chopped (about 3 cups)
1/2 cup toasted pine nuts (optional)
1 cup mozzarella, cubed or shredded (optional)
Recipes
Step 1: Cook pasta according to package directions.
Drain and cool.
Step 2: In a small mixing bowl, whisk together vegetable
oil, balsamic vinegar, Dijon-style mustard, salt and pepper.
Step 3: In a large mixing bowl, combine pasta, basil
and tomatoes. Pour vinaigrette over top and toss together. Cover and
chill at least 1 hour.
Step 4: If desired, add pine nuts and cheese just
before serving, tossing again to combine. Makes 12 servings.
